Beetroot patties

Beetroots have been associated with numerous health benefits, including improved blood flow and lower blood pressure. Packed with essential nutrients, beetroots are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C, so it’s really essential to include them in your diet. Therefore we present you a recipe for delicious, vegetarian beetroot patties,  a perfect lunch or a yummy snack option.

Ingredients:

  • 100g sesame seeds, for coating

For the patties:

  • 140g grated raw beetroot
  • 140g peeled and grated apple
  • 100g grated feta
  • 2 finely chopped spring onions
  • 50g gluten-free oat
  • 1large egg
  • 2teaspoons ground cumin
  • 1 heaped teaspoon turmeric

For the dip:

  • 1 large ripe avocado
  • 8 tablespoons Greek yoghurt
  • 1 small garlic clove
  • lemon juice (from half of lemon)

Instructions:

Combine the ingredients for the dip, using blender or a food processor, mix until smooth. Let it rest in the fridge, so it will get chilled for serving.

Heat oven to 180C.

In a large bowl, mix all the ingredients for the patties, coarsely grated, together with a large spatula until well blended.

Form the mixture into 12 round patty shapes, around 6 cm wide. They will feel wet, but this helps to keep them moist during baking.

Put the sesame seeds on a plate and coat the patties.

Line a baking tray with baking parchment  and lay each patty on the tray.

Bake for 20 mins - the patties should get firm to the touch and lightly golden.

Serve the patties with the dip. You can also try our kale guacamole as a dip or serve patties as veggie burgers. There are many ways to enjoy this healthy and yummy dish, so find your favourite and please do!
